Mississippi Roast

This is a twist on the traditional pot roast which I am used to preparing in a crockpot with onion, carrots, and potatoes. Seasoned with au jus and ranch dressing packets and pepperoncinis, it has a really nice flavor and can be either a traditional meal with sides, such as mashed potatoes and broccoli or as a roast beef sandwich or even over egg noodles.

*A tip – I have tried to rush this roast by cooking on high for less time and it really does not allow the meat to get tender. Low and slow on this one!
