Shrimp and Grits with Sausage

Ingredients:

4 cups water
1 cup grits
half a pound large shrimp, peeled and deveined (about 12)
1-2 links of smoked sausage, sliced
1 cup shredded pepper jack cheese
1 cup shredded sharp cheddar cheese
olive oil
butter
salt
pepper
cajun seasoning

Heat 1 tablespoon olive oil in skillet. Add sliced sausage and sprinkle with cajun seasoning. Fry until lightly browned on each side and warmed through; remove from pan. Sprinkle shrimp with cajun seasoning; add 1 tablespoon of butter to pan and cook shrimp about 2 to 3 minutes per side. Remove shrimp from pan and add wine or chicken broth and scrape up bits, bring to boil and reduce to simmer. Reduce by about half. Finish sauce by adding a tablespoon of butter and whisking until smooth.

Meanwhile, prepare grits. Bring water and a tablespoon salt to a boil; add grits and mix well. Cover and reduce heat to simmer and cook for 12-15 minutes until water is absorbed. Remove from heat and add cheeses, 2 tablespoons butter, and salt and pepper to taste.

Serve by spooning grits into a bowl and topping with shrimp and sausage; drizzle with sauce. Garnish with green onions.
